Merry Christmas!

I hope you’ll enjoy the holidays as much as I will.  While I love the gift giving, for me the holidays are about family getting together and that, of course, requires food! Along with a hearty chili we’re having tonght, here’s the salad I’m serving with it.

Lee’s Festive Couscous Salad

2 cups cooked couscous
6 green onions, thinly sliced
2 medium-sized tomatoes, seeded and diced
1 cup English cucumber, peeled and diced
2 cups cooked garbanzo beans
1 cup fresh parsley, chopped

Toss the above ingredients in a large salad bowl. Can be made ahead and stored in refrigerator overnight.

Dressing

1/3 cup extra virgin olive oil
1/4 cup lemon juice
1 clove garlic, minced
1/2 teaspoon Dijon mustard
1/2 salt
freshly ground black pepper, to taste

Pour dressing over salad an hour before serving, toss and refrigerate.
