A couple of weeks ago a friend gave me a huge cabbage from her garden and I decided to use some of it to make coleslaw. I couldn’t find a recipe that called for ingredients I had on hand, so I made up my own recipe. Here it is.
Lee’s Quick ‘n’ Easy Coleslaw
1/4 medium cabbage (green or red)
1 large carrot
1 large apple
2 tablespoons extra virgin olive oil
1-1/2 teaspoons white wine vinegar
1-1/2 teaspoons lemon juice
1 teaspoon Dijon mustard
salt & pepper to taste
Finely grate the cabbage, carrot and apple. My food processor makes quick work of this! In a small bowl, whisk together the olive oil, white wine vinegar, lemon juice, Dijon mustard, and salt and pepper. Pour the dressing over the grated vegetables, toss and serve.
The apple adds a little sweetness to the coleslaw and the dressing gives it a nice fresh flavor. I hope you enjoy it!
