I’m blogging with the Harlequin American Romance Authors about bald eagles, which segued into this year’s record sockeye salmon, and so I thought I’d share my favorite recipe for grilled sockeye.
Grilled Sockeye Salmon
4 salmon steaks or fillets
Marinade
2 tablespoon olive oil
1 tablespoon vinegar
1 tablespoon grated orange rind
1/3 cup orange juice
2 cloves garlic, minced
2 teaspoon paprika
1/2 teaspoon each salt and cayenne pepper
Combine all of the above ingredients. Marinate the salmon for at least 30 minutes. Grill till done, when the flesh can be flaked with a fork.
