Friday Food for Thought—Coleslaw Dressing
Friday, February 17, 2012 at 12:34PM Coleslaw is one my favorite salads but I've never had any luck with the dressing. Now, after a long and lengthy search and much experimenting in the kitchen, I've come up with a recipe I love.
Lee's Coleslaw Dressing
1/4 cup cider vinegar
1/4 cup mayonnaise
1/4 cup plain yogurt
1 teaspoon Dijon mustard
1/4 cup finely chopped sweet red onion
salt and pepper to taste
Mix al ingredients in a small bowl. Pour the dressing onto the slaw and toss. Refrigerate for at least an hour before serving.
I hope you enjoy it as much as I do!

PS: I make coleslaw with shreeded green or red cabbage (or a combination of the two), grated carrot and grated apple. A firm, tart apple like a Granny Smith works best. What do you put in your slaw?

Your dressing sounds delicious, Lee! I love sunflower seeds in my coleslaw - they have a nice nutty flavour and add a few good minerals to the mix.
Good idea to add sunflower seeds! I'll try it!
